Today’s Menu
Sunday is my day to cook food for the week. I was feeling lazy so instead of cooking some meat, I grabbed a couple of rotisserie chickens from the store. I’ll be supplementing the chickens with some home-made lentils soup and ginger mashed sweet potatoes.
The lentils have a base of fried mushrooms and mirepoix, along with some smoked ham hocks for additional flavor. They’ve been cooking with all of that flavorful goodness and chicken stock for about 3 hours now and taste really good.
The sweet potatoes are simple enough. I used this recipe with a few personal customizations (like the addition of a few dashes of onion powder and cinnamon). Also very tasty stuff.
With these tasty comestibles and Thanksgiving coming up, it’s going to be a good week of eating.
It all sounds yummy, I sure do miss your clam chowder.
