All hail kale!
Anyone who has known me for any length of time knows that if given a choice between something healthy to eat or something really tasty and snacky with questionable nutritional value, I’ll more often than not take the low (nutrition) road.
I like candy. I like ice cream. I like chips.
I discovered something a while back that contradicts my usual proclivities: kale chips.
I know kale has gotten a lot of good press lately, much deservedly. Super food. High in nutrition, etc. What’s even better is that it makes an amazing snack and it’s super simple.
Preheat your oven to 225 degrees (F). Wash and dry the kale. Letting it sit for several hours is fine. Toss the kale with a little olive oil and salt. Distribute in one layer on a baking sheet and bake until crispy. This usually takes around 45-60 minutes and I like to gently stir and flip the kale while it’s crisping up.
That’s it.
There is only one thing that’s not ideal. Kale chips don’t really store well. So the good part is that you have to eat them all. The bad part is that you can’t make enough for the week. You have to make them fresh and eat them warm.
You might see pre-made packaged kale chips in a store. Do not be tempted. They’re good, but lack the amazing vibrancy of the homemade variety. Do yourself a favor and grab some fresh kale (any kind is fine, although I prefer the “wrinklier” varieties. You won’t regret it!

The veg. and fruit here in Colorado are so yummy that you can’t help but eat lots of them! Or maybe it’s all the rain!!

I’ve never tried them but I hear great things! Have you tried tossing them with your super secret seasoning mix? I have just a bit left and just today wondered how I should use it. 🙂
I haven’t tried tha, Ann. I like my kale chips with salt and oil, but my seasoning mix might be tasty. Next time i make them, i’ll try it.
